Pad Kee Mao translates to “drunken noodles” in the English language, but don’t be fooled by this dish’s namesake—there is no alcohol in these addictive noodles. It is believed that this dish was created for rowdy party revelers after a night of drunken fun in order to soak up the alcohol in their systems’. Name aside, what sets this particular dish apart from other noodle dishes in Thailand is the use of fresh wide rice noodles, which are perfect for soaking up the sweet and savory sauce.
